Healthy Beet Sliders

The “unofficial” start of season is here!  The time of family gatherings and the real crowd is here.  Burgers are always a summertime favorite, and sliders can be even more fun.
Aren’t slider buns the cutest? They are the perfect portion size. The term "slider" actually means a lot more than just a hot miniature sandwich. Sliders have been around since 1916 and were invented by the founder of White Castle.
Beans and grains, we love you in veggie burgers, but we're asking you to take a backseat for this one. Like their namesake, the star ingredients in Beet Sliders are all vegetables. From beets to micro sprouts, broccoli to corn, your veggie burger just got a lot more colorful and garden-friendly. Beets are kind of amazing. I’m always shocked when people say they don’t like beets…I think maybe they just don’t know how to prepare them!
Whether you're making beet sliders or the other ones, the size of the patties, in this case beet stuffing is important. You want them to be the right size for the buns, and they won't cook evenly if they're all different sizes.
Beet Sliders make a nutritious snack. Foods that have bright or dark colors, including beets, contain generous amounts of beta-carotene, which converts into vitamin A in the body. A powerful antioxidant, vitamin A promotes healthy eyesight and skin, and may help prevent certain types of cancer. Beets also contain potassium and are high in lycopene a substance that may reduce the risk of prostate and other forms of cancer.
